Avocado Bread

Surprise your guests with a pale green loaf, rich in taste, texture and nutrition.

1 egg
1/2 cup mashed avocado, (1 small)
1/2-cup buttermilk
1/3-cup vegetable oil
2 cups all-purpose flour
3/4-cup sugar
1/2-teaspoon baking soda
1/2-teaspoon baking powder
1/4-teaspoon salt
3/4 cup chopped pecans (3 oz.)
Butter, room temperature


Preheat oven to 350F (175C). Grease a 9" x 5" loaf pan; set aside.

In a medium bowl or food processor fitted with the metal blade, mix egg, avocado, buttermilk and oil until blended. Add flour, sugar, baking soda, baking powder, salt and pecans. Mix only until blended: do not over mix. Pour batter into prepared pan.

Bake 55 minutes to 1 hour, until wooden pick inserted in center comes out clean. Cool 10 minutes, Turn out of pan. May be frozen and reheated. Slice and serve warm with butter. Makes 1 loaf.

Variation
To make Avocado Muffins, pour batter into greased muffin cups, filling 2/3 full. Bake in a preheated 350F (175C) oven 25 to 30 minutes. Makes 12 muffins.
